That’s actually one of the first restaurant meals I had after starting a plant-based diet. Curry sweet potato ravioli and a glass of Woodford Reserve bourbon—fantastic.
But let’s get real. I don’t eat anything like that at home.
Most people don’t. It’s the rare bird who wants to spend all their time in the kitchen making pretty meals.
The rest of us, we’re too busy (or too lazy) for that. Sure, we want to lose weight eating delicious, healthy food, but we know we’re not going to spend hours preparing it.
Looking through complicated plant-based recipes online or in cookbooks, it’s easy to just say “fuck it” and go back to killing yourself with junk food and the Standard American Diet.
But whole-food, plant-based eating can be quick, tasty, and downright affordable—even if you shop at high-end natural food stores.
